Buyers return to the cheese aisle
Closing assessment from the Department of Cultured Assets. Published at 20:00 UTC.
CT30 3,065.96 ▲ 0.90%
Demand held up across most of the board. The Cheddar 30 closed up 0.90% at 3,065.96. Limburger led the board with a gain of 9.56%, while Manchego fell 6.07% and finished the session at 45.66 curds.
The 11:00 cellar inspection gave soft holdings a clean bill of health, and the inspectors stayed for a second plate. At 15:00 the fondue desk raised its temperature target, a decision the committee described as firm but yielding. Soft finished as the strongest sector at +5.70%, with smoked the weakest at -3.02%. The whey inventory release at 17:30 lifted soft names into the close.
The outlook depends on aging conditions and on whether the lunch committee returns on time. We continue to rate the broad board Melt and remain constructive on Limburger. Cracker coverage is adequate. The strategic biscuit reserve was not touched.
