The market develops a rind

The session began with a smell nobody wanted to name. The Cheddar 30 closed down 1.33% at 2,932.51. Parmesan led the board with a gain of 3.24%, while Halloumi fell 9.07% and finished the session at 138.45 curds.

The 11:00 cellar inspection gave washed-rind holdings a clean bill of health, and the inspectors stayed for a second plate. At 15:00 the fondue desk raised its temperature target, a decision the committee described as neither hard nor soft. Smoked finished as the strongest sector at +0.77%, with blue the weakest at -4.64%. The cracker supply report at 17:30 weighed on fresh names into the close.

Weather in the caves remains the main risk to our view. We continue to rate the broad board Hold at Room Temperature and remain cautious on Halloumi. Cracker coverage is adequate. The strategic biscuit reserve was not touched.
