Demand held up across most of the board. The Cheddar 30 closed up 0.27% at 2,914.13. Smoked cheddar led the board with a gain of 10.61%, while Gruyere fell 6.37% and finished the session at 158.02 curds.
The 11:00 cellar inspection found irregular moisture in soft inventories. The inspectors declined to elaborate and left through the side door. At 15:00 the fondue desk lowered its temperature target, a decision the committee described as firm but yielding. Smoked finished as the strongest sector at +6.27%, with fresh the weakest at -2.42%. The brine settlement window at 17:30 lifted smoked names into the close.
Weather in the caves remains the main risk to our view. We continue to rate the broad board Melt and remain constructive on Smoked cheddar. Cracker coverage is adequate. The strategic biscuit reserve was not touched.
