Buyers return to the cheese aisle

Closing assessment from the Department of Cultured Assets. Published at 20:00 UTC.

CT30 2,990.68 ▲ 0.94%

The floor opened cautiously and found its nerve before lunch. The Cheddar 30 closed up 0.94% at 2,990.68. Manchego led the board with a gain of 9.70%, while Taleggio fell 6.57% and finished the session at 112.01 curds.

The 11:00 cellar inspection gave processed holdings a clean bill of health, and the inspectors stayed for a second plate. At 15:00 the fondue desk lowered its temperature target, a decision the committee described as neither hard nor soft. Processed finished as the strongest sector at +3.68%, with blue the weakest at -1.70%. The mould audit at 17:30 lifted smoked names into the close.

Weather in the caves remains the main risk to our view. We continue to rate the broad board Melt and remain constructive on Manchego. Cracker coverage is adequate. The strategic biscuit reserve was not touched.
