Buyers return to the cheese aisle
Closing assessment from the Department of Cultured Assets. Published at 20:00 UTC.
CT30 3,019.94 ▲ 1.29%
Demand held up across most of the board. The Cheddar 30 closed up 1.29% at 3,019.94. Roquefort led the board with a gain of 11.10%, while Pecorino fell 5.43% and finished the session at 78.74 curds.
The 11:00 cellar inspection found irregular moisture in processed inventories. The inspectors declined to elaborate and left through the side door. At 15:00 the fondue desk lowered its temperature target, a decision the committee described as appropriately aged. Blue finished as the strongest sector at +5.26%, with hard the weakest at -0.62%. The whey inventory release at 17:30 lifted smoked names into the close.
Positioning looks crowded in the soft names, which tend to spread when pressed. We continue to rate the broad board Melt and remain constructive on Roquefort. Cracker coverage is adequate. The strategic biscuit reserve was not touched.
