The market develops a rind
Closing assessment from the Department of Cultured Assets. Published at 20:00 UTC.
CT30 2,953.15 ▼ 0.96%
The session began with a smell nobody wanted to name. The Cheddar 30 closed down 0.96% at 2,953.15. Slice composite led the board with a gain of 7.10%, while Scamorza fell 13.29% and finished the session at 76.36 curds.
The 11:00 cellar inspection gave washed-rind holdings a clean bill of health, and the inspectors stayed for a second plate. At 15:00 the fondue desk raised its temperature target, a decision the committee described as well within the rind. Washed-rind finished as the strongest sector at +2.27%, with smoked the weakest at -5.51%. The cracker supply report at 17:30 weighed on hard names into the close.
We expect volatility to persist while the board debates the definition of a slice. We continue to rate the broad board Hold at Room Temperature and remain cautious on Scamorza. Cracker coverage is adequate. The strategic biscuit reserve was not touched.
